Oatmeal Raisin Cookies
Ingredients:

2 cups quick-cooking rolled oats

1 cup + 2 Tbsp all-purpose flour

1 tsp ground cinnamon

1/2 tsp baking powder

1/2 tsp sea salt

1 cup coconut palm sugar
-
1/3 cup coconut oil, at room temperature
-
1/3 cup unsweetened applesauce
-
1 egg
-
1 tsp vanilla
-
1/2 cup raisins

Instructions:

Preheat oven to 350F. Spray 2 cookie sheets with olive oil or line with
parchment paper and set aside.

Combine oats, flour, cinnamon, baking powder, and salt in a medium bowl.

Mix well. In a large bowl, beat brown sugar and coconut oil on low speed of electric mixer until mixture resembles wet sand. Add applesauce, egg, an vanilla and beat again until well blended.

Add oat mixture to sugar mixture; and using a wooden spoon, stir until dry ingredients are moistened.

Stir in raisins.

Drop dough by the spoonful onto prepared cookie sheets. Use about 2 Tbsp of dough per cookie and space 2 inches apart. Flatten cookies to 1/4-inc thickness using a fork. Bake for 12 - 14 minutes, until tops of cookies are dry to touch. Cookies may seem under-baked, but that's okay! Do not over-bake.

Let cool on cookie sheets for 5 minutes, then carefully remove to cooking rack.
