Oatmeal Raisin Cookies

 

Ingredients:

  • 2 cups quick-cooking rolled oats

  • 1 cup + 2 Tbsp all-purpose flour

  • 1 tsp ground cinnamon

  • 1/2 tsp baking powder

  • 1/2 tsp sea salt

  • 1 cup coconut palm sugar

  • 1/3 cup coconut oil, at room temperature

  • 1/3 cup unsweetened applesauce

  • 1 egg

  • 1 tsp vanilla

  • 1/2 cup raisins

Instructions:

  • Preheat oven to 350F. Spray 2 cookie sheets with olive oil or line with 

      parchment paper and set aside.

  • Combine oats, flour, cinnamon, baking powder, and salt in a medium bowl.

  • Mix well. In a large bowl, beat brown sugar and coconut oil on low speed of electric mixer until mixture resembles wet sand. Add applesauce, egg, an vanilla and beat again until well blended.

  • Add oat mixture to sugar mixture; and using a wooden spoon, stir until dry ingredients are moistened. 

  • Stir in raisins.

  • Drop dough by the spoonful onto prepared cookie sheets. Use about 2 Tbsp of dough per cookie and space 2 inches apart. Flatten cookies to 1/4-inc thickness using a fork. Bake for 12 - 14 minutes, until tops of cookies are dry to touch. Cookies may seem under-baked, but that's okay! Do not over-bake.

  • Let cool on cookie sheets for 5 minutes, then carefully remove to cooking rack.
